Production: 4 weeks of maceration on the skins, 2 manual pump-overs per day with breaking of the cap, malolactic fermentation in wood, followed by 10 months of maturation in tonneaux. Bottle aging for at least 6 months.
⚠️ The cork is sealed by hand with shellac by Mauro!
Description: A pure Canaiolo produced from the lands near Montalbano in Capraia e Limite, Tuscany.
An elegant and sophisticated choice, with a light red color, it releases an intense, floral aroma with notes of birch and violet; it is balanced and easy-drinking on the palate, with good persistence and balance.
Pairing: Fatty red meats, meat or fish sauces without tomato, fresh or semi-aged cheeses
