Bottles Produced: 700 Limited Edition
Production: 4 weeks of maceration on the skins, twice daily manual pumping over with cap breaking, malolactic fermentation in wood, and then 10 months of maturation in tonneau. Aged in bottle for at least 6 months.
⚠️ The cap is closed with shellac by hand by Mauro!
Description: A pure Canaiolo produced from the lands near Montalbano in Capraia e Limite in Tuscany.
An elegant and sophisticated choice, with a light and clear red colour, it releases an intense and floral aroma with notes of birch and violet, balanced and drinkable on the palate with a
good persistence and good balance.
Pairing: Fatty red meats, meat or fish sauces without tomato, fresh or semi-mature cheeses
